Ingredients
- 20 ml baking powder
- 1.5 cup flour
- 1/2 tsp salt
- 1.25 cup sugar
- 125ml butter (room temp)
- 3 lg eggs
- 3/4 cup milk
- 1/2 tsp vanilla
- 2 cups coconut
Method
Preheat oven to 350F (175C) and prep cake panSift flour, baking powder and salt into a bowl. Mix and set aside.
Butter the sugar.
Mix eggs into the buttered sugar one at a time.
Add in vanilla.
Add in the flour mix and milk, alternating a bit at a time
Fold in the coconut just until mixed
Pour batter into pan
Bake for approximately 30 - 40 min, or until golden brown.
