Klapperkoek (Coconut Cake)

Ingredients

  • 20 ml baking powder
  • 1.5 cup flour
  • 1/2 tsp salt
  • 1.25 cup sugar
  • 125ml butter (room temp)
  • 3 lg eggs
  • 3/4 cup milk
  • 1/2 tsp vanilla
  • 2 cups coconut

Method

Preheat oven to 350F (175C) and prep cake pan

Sift flour, baking powder and salt into a bowl. Mix and set aside.

Butter the sugar.
Mix eggs into the buttered sugar one at a time.
Add in vanilla.

Add in the flour mix and milk, alternating a bit at a time

Fold in the coconut just until mixed

Pour batter into pan

Bake for approximately 30 - 40 min, or until golden brown.
